Strawberry Balsamic Grilled Chicken
Marinate 6 Chicken Breasts with:
3 Tbsp Olive Oil,
4 Tbsp balsamic vinegar,
2 garlic cloves minced,
1 Tbsp Italian dressing,
1 tsp Salt,
1/2 tsp Pepper
Make the topping by stirring together:
1-1/2 cups diced strawberries
2 tsp brown sugar
2 tsp balsamic vinegar
1/8 tsp black pepper

Potato Salad Dipping Sauce

4 Tbsp mayonnaise
4 Tbsp sour cream
1 tsp Dijon
1 Tbsp Apple cider vinegar
4 small dill pickles diced
1 Hard boiled egg
2 Tbsp chopped fresh Dill
Salt &Pepper
Mix all ingredients together and serve with roasted fingering or baby potatoes.

Pina Colada Coleslaw

1 cup unsweetened shredded coconut
1 pkg shredded cabbage & carrot coleslaw
1/2 cup sliced green onions
1 cup diced pineapple
1/2 cup coarsely chopped macadamia nuts
Dressing:
1/4 cup mayonnaise
1/2 cup pineapple juice
1 tsp cider vinegar
1/2 tsp coarse salt
Serve with grilled chicken

Steak Salad with Peach Vinaigrette

1 ripe peach, pitted and coarsely chopped
2 garlic cloves, minced
1/2 cup extra-virgin olive oil
1/3 cup white wine vinegar
1 teaspoon coarse salt
1/2 teaspoon black pepper
1 Tablespoon coarse-grain mustard
1 Tablespoon soy sauce or coconut aminos
Combine all ingredients into the blender. Enjoy with a green salad featuring either steak or chicken, and peaches, cheese and nuts.
I have made this dressing before using frozen peaches and it worked out great.

Carrot Sweet Potato Soup

1 pound peeled & chopped carrots
1 pound peeled & chopped sweet potato
1 chopped onion
6 cups water
Season with salt and pepper.
Combine everything into a pot and simmer on the stove until the vegetables are tender. Then pour both liquid and solids into a blender and puree with 1/3 cup of Sour Cream.

Simmer Compote on the stove:
3/4 cups diced strawberries
1/3 cup diced onions
2-1/2 tsp chipotle peppers in adobe sauce, finely chopped
1 tsp brown sugar
Salt to taste
Meatballs:
1/2 pound ground beef
3 strips of cooked bacon, chopped
Salt & Pepper
Roll into balls, the size of an ice cream scoop, brown in a frying pan, and once you flip them over, cover with a lid and remove from heat. They should cook through in about 3 minutes.
Serve these as a main dish by including a salad and vegetable.
